Bu1, Acacia (Black Locust) Honey
The honey
Bulgarian acacia honey is renowned for its exceptional clarity and delicacy, and the sample from the Sofia foothills is no exception. Compared to Italian or Hungarian acacia honeys, it is often lighter in aroma, with a silken mouthfeel and faint vanilla notes.
The short blooming season of Robinia pseudoacacia near Sofia yields a honey that is high in fructose and resists crystallization for extended periods.
While Hungarian acacia may be slightly sweeter and Italian acacia more floral, the Bulgarian version is praised for its purity and subtle elegance, often containing pollen percentages exceeding 40–50%, signaling true monoflorality.
This particular honey is harvested in 2025 in the apiary located in the village of Gaitanevo.
Health benefit: Due to its low glucose and high fructose content, this honey is suitable for people sensitive to sugar spikes. It’s also traditionally used for soothing coughs, especially in children, and for mild digestive support.

The beekeeping
Valeri Vatev is the owner of Honey Product Art Ltd, which produces under the brand "Art of Nature". He has 130 hives, located in two apiaries near Sofia - most of them are Dadant Blatt, but here are also a few Langstroth types. Valeri picked up beekeeping 15 years ago out of love for Nature and fascinated about the bees. In 2016 his hobby officially became a business and nowadays this endeavor involves his entire family, as his wife and three children are actively involved in the harvest.
The production is sold exclusively in retail - in over 50 local shops but also to numerous loyal private customers.
