The honey
This Rape seed (canola) honey crystallizes quickly, forming a fine-grained, creamy texture, characteristic of raw rapeseed honeys. What sets the Bulgarian variant apart—especially from German or French equivalents—is its light acidity, slightly spicy finish, and buttery mouthfeel. Collected during spring bloom near Sofia, this honey is pale yellow to ivory and offers a delicate cabbage-floral aroma. Unlike northern European canola honeys, which may develop a more sulfuric undertone, the Bulgarian type remains mild and pleasant, reflecting the less industrialised landscapes where bees forage.
Health benefit: Rapeseed honey is rich in glucose oxidase, which boosts natural antibacterial activity. Its quick crystallization and mild flavour also make it ideal for daily immune support, especially when stirred into warm water or herbal teas.

The beekeeping
Valeri Vatev is the owner of Honey Product Art Ltd, which produces under the brand "Art of Nature". He has 130 hives, located in two apiaries near Sofia - most of them are Dadant Blatt, but here are also a few Langstroth types. Valeri picked up beekeeping 15 years ago out of love for Nature and fascinated about the bees. In 2016 his hobby officially became a business and nowadays this endeavor involves his entire family, as his wife and three children are activelly involved in the harvest.
The production is sold exclusivelly in retail - in over 50 local shops but also to numerous loyal private customers.
This particular honey is harvested in 2025 in the apiary located in the village of Stolnik.
