The honey
This rare lavender honey, harvested in the Danube region—known for its vast lavender fields—is a truly elegant varietal. Its light amber to golden hue is paired with a delicate yet persistent perfume aroma, reminiscent of blooming flowers in midsummer. The taste is smooth, subtly fruity with soft exotic fruit undertones and a clean, non-lingering finish.
Compared to lavender honeys from Provence (France) or Castilla-La Mancha (Spain), Bulgarian lavender honey is typically less intensely sweet, with a more balanced floral-herbal profile. The Silistra terroir, with its hot and windy climate and fertile soils, imparts a refined freshness and clarity rarely found in other origins.
Lavender honey is traditionally appreciated for its calming properties (mild sedative effect); soothing effect on the nervous and digestive systems; gentle antimicrobial and antioxidant action.
Its elegant aroma makes it a favorite in infusions, light desserts, or simply savored on its own.

The beekeeping
About the beekeepers and their apiary:
Stefka and Valentin Nakov got married 25 years ago and since then they pickeu up beekeeping. Initially a hobby, nowadays this is a family business, which includes their children. The family owns 101 colonies, situated near Silistra in the village of Brenitsa. Since 2015 the apiary is bio certified, which provoked some of the nearby farmers to undergo the process of certification as well. Stefka and Valentin are passionate about their craft not only in order to increase the honey harvest but also because because they love the bees and believe that organic farming is the fair way for both the bees and the nature.
This particular honey is harvested in 2025 but according to Valentin (and lab analysis) the previous year's harvest was twice better - unfortunately, all is already gone since Lavender is in high demand recently.
