DK2, Hornfiskrøn Honey, from the salt meadows of Læsø
The honey
The honey was extracted from the honeycombs around 15.9.2024. The water content is around 18.5 percent. The honey is fairly finely crystalline and has a soft yet firm consistency. The honey has a deep and complex taste without being too strong. The nectar comes from the diverse flora of the salt meadows and heaths. For example, statice, sea aster and heather and many other plants. Some of the species are low in pollen and do not appear when analyzed.
The beekeeping
My beekeeping takes place on Læsø, which is a small island in northeastern Denmark. The beekeeping is based on brown bees, which are found on Læsø - the original Danish honey bees. I am 54 years old and have been a beekeeper for 22 years on Læsø. I now have three apiaries, one of which is located on Hornfiskrøn, a small island on the southernmost part of Læsø, with beautiful natural areas. There is an interesting flora here that culminates in July and August. The beekeeping is adapted to the lifestyle of the brown bees and the honey is harvested once a year in early autumn. The honey is extracted by pressing and stirred a little later and bottled.
