The honey
The honey is a Danish summer honey from the countryside. The bees have collected the honey in June and July. It was harvested on 7 August 2025 with a water content of 18%. Immediately after extracting and straining the honey is stored at 14 degrees and strirred once a day. On 19 August the honey is jarred.
A soft and creamy summer honey with a mild yet intriguing flavor, combining deep floral notes with a touch of fruit. The honey has a long aftertaste of malt and a note of citrus. The Nectar comes from a lot of different plants from cultivated and grazing fields, wild fences, ornamental and fruit gardens as well as vegetable with berries and herbs. The bees are especially happy about whitethorn and white clover. Perfect as a spread, in baking, stews, and oven roasted dishes. The beekeeping
My name is Lone Valentin Bram and I live on Als, an island in southeastern Denmark. We have a small farm, which is located out in the countryside up against the large "Nørreskov" forest. I call my honey "Jummes Honne", Jumme is my nickname and Honne is the local word for honey.
I have been a beekeeper for 12 years and have between 10-15 hives distributed over 2 apiaries in the most beautiful local nature - forest, organic fields, agricultural gardens and wild fences.
