Fi3, Wildflower honey from Fireweed
The honey
This unique honey has very light colour intensity and usually water-like colour tone, which makes it easily recognizable and distinguishable from other Finnish unifloral and polyfloral honeys. Pure fireweed honey crystallizes very slowly and stays in liquid state for a long time, which is not common to Finnish honey varieties. The odour of fireweed honey is described as dry hay, weak pale malt and fruits and its taste as floral, exotic fruit, vanilla, brown sugar, lemon and almond past.
Honey nectar sources: Chamerion angustifolium (L.) Holub (Epilobium angustifolium L.) Traditional uses of the honey: Fireweed honey is delicious for example with ice-cream or yogurt. Since it stays liquid for a long time, it is easy to use in all kinds of cooking and baking instead of white sugar. The beekeeping
Arctic Honey was founded in 2017. Our apiaries with Italian bees are located on the seaside meadow near Oulu, where fireweed is a dominant plant. We have about 50 beehives and annually harvested amount of honey is 50–100 kg per hive.
I have a long working history in various professions. I got the professional qualification of beekeeper in 2018. The same year I won the award of the best honey in Finland with a honey sample harvested from the same area as the honey sample on show in the Honey bar. Currently I work in Finnish Beekeepers’ Association as a beekeeping advisor and have beekeeping as a hobby. |
