The honey
In its liquid state, pure cherry blossom honeys are yellow to light amber in colour and have an intensely aromatic smell and taste. At medium water contents, they gradually crystallise to a fine, easy to spread consistency.
The speciality of cherries is the occurrence of extrafloral nectaries in the leaf axils in addition to the usual nectaries inside the blossom. Microscopic examination also reveals calcium oxalate crystals originating from these nectaries. These can cause a high conductivity (up to 0.90 mS/cm), which is unusual for a blossom honey. Economic fruit growing shapes the landscape in some regions of Germany. Bee colonies are brought into the orchards for pollination during the fruit blossom season. In northern Germany, for example, the ‘Altes Land’ region and the Lake Constance area in the far south are known for their fruit growing. For climatic reasons, for cherries the main extension area is in the centre of Germany, particularly in the federal state of Hessen.
Cultivated fruit varieties such as sweet cherries (Prunus avium) in combination with mild climate in springtime offers plenty of nectar and pollen for honeybees. The result can be a unifloral honey. This honey comes from near Kassel in the federal state of Hessen and was harvested in May 2025. It was purchased by a honey producer association, therefore no beekeeper name is given. |
