The honey

The heather (Erica manipuliflora) thrives across the hills and wild landscapes of Andros, the greenest and northernmost island of the Cyclades. Flourishing in the unspoiled, sun-drenched terrain this hardy shrub blooms in the crisp air of late autumn to early winter, painting the rugged slopes with delicate purple flowers. The bees of 3Melisses harvest its nectar in pristine areas like Makrotantalo and central Andros—places where nature reigns pure. 
Heather honey walks in with character — sharp, silky textured, and just a bit untamed.
At first glance: rich amber and opaque, with a fine, elegant crystallization that sets in quickly - almost too quickly for the impatient. On the nose, it’s buttery caramel, dried wildflowers, and something faintly animalic - a raw, earthy honesty that signals depth.
Take a spoonful, and the contradictions begin to unfold.
Sweet?  Of course.
But not only.
There’s a distinct bitterness in the aftertaste, an unexpected saltiness rare in honey, and a whisper of acidity that dances lightly across the palate. As it melts, it triggers salivation - a cooling freshness spreads, almost cleansing. It leaves the mouth reset. Clean and ready.
Underneath the main notes, subtle flavors emerge — plum, smoky toffee, maybe even bitter coffee. It’s rich and full, layered and evolving — the kind of complexity you don’t immediately love, but grow to crave.
