The honeyProduced from the secretions of Marchalina hellenica - an insect that feeds on the sap of the Pinus halepensis and Pinus brutia - this honey is a gift of quiet cooperation between insect, tree, and bee. It accounts for approximately 60% of Greece’s total honey production, harvested in two distinct cycles: once in spring and again in autumn, as the forest breathes in and out with the seasons.
Its aroma is unmistakably balsamic-dense with the scent of warm pine resin, dry wood, and damp earth. There is a vegetal depth to it, grounded and almost smoky. It does not flirt with sweetness. It speaks in a lower register: serious, grounding, ancient. On the palate, pine honey is thick and slow-moving, with a rich, viscous texture that clings to the spoon.
