The honeySidr honey comes from a truly unique plant with deep roots in legend and tradition - the Christ’s Thorn, known in Greek as “Paliouri”.
This thorny shrub or small tree thrives in the mountainous landscapes of central and northern Greece. According to ancient lore, its spiny branches were used to craft the crown of thorns placed on Christ’s head before the crucifixion. Flowering from mid-May to early June Paliurus spina-christi offers an abundance of golden nectar and orange-yellow colored pollen. The resulting honey is a rich amber with reddish and greenish hues, with a velvety texture - buttery and thick - almost reluctant to let go of the spoon and also takes a few seconds to melt on the tongue. Its aroma opens with notes of molasses, cooked fruit, balsamic sharpness and warm resin. The taste leans into the DNA of honeydew: beeswax, wood, molasses and a syrupy lingering finish. Balanced, but bold. Known for its unusually high antioxidant levels and traditional therapeutic uses, Paliouri honey brings both flavor and function in a form that feels elemental. This rare honey is collected in the NATURA 2000 protected zone GR1110011, located in Asvestades, Didymoteicho — a land of untouched beauty and exceptional biodiversity, just two kilometers from the Turkish border.
