The honey
The Vanilla Fir honey is a PDO product and a rare gem of the Greek mountains — a honey unlike any other in the world.
It’s not made from flowers, but from the secretions of the black fir (Abies cephalonica), a majestic conifer that grows exclusively in the high altitudes of the central and southern Peloponnese. Nowhere else on Earth does this honey occur. Harvested in small quantities and only during specific years when conditions allow, it is among the rarest types of honey in Europe — and one of Greece’s proudest expressions of terroir. Unlike floral honeys, Vanilla Fir doesn’t crystallize easily. It flows thick and slow, like satin, with a pearly, light amber color — almost opalescent — and a glossy sheen that has given it the name “vanilla.” Its aroma is gentle but deep — warm wood, damp earth, and faint notes of vanilla pods or creamy caramel. A forest after the rain. On the palate, it is unexpectedly mild, not overtly sweet, and yet full-bodied. There’s a clarity to the taste — a quiet sophistication. Mary Nikolaou is a professional beekeeper and queen breeder based in Kalamata, in the Peloponnese region of southern Greece with over a decade of experience in the field. She holds a degree in Agricultural Technology and has completed specialized studies in Beekeeping and Professional Apiculture at the Institute of Agricultural Sciences and the Aristotle University of Thessaloniki.
She is officially certified as an Expert in Honey Sensory Analysis by CREA. She actively promotes the unique botanical and sensory identity of Greek honey working with the Olive Oil Tasting Laboratory of the University of the Peloponnese. E mail: [email protected]
