The honey
In Latvia, linden flower honey is mostly collected from urban Tilia trees. The common Linden tree (Tilia Cordata) also grows wild in Latvia, but does not usually form large continuous groves. Although lindens bloom almost every year, each year is not necessarily a good linden honey year.
The honey collected from different linden species or hybrids of linden is slightly different, but in general it is characterized by a light yellow to darker yellow color, perhaps also slightly greenish, which depends on how much linden leaf secretions the bees have collected, the more of them – the darker the honey. The honey crystallizes within 3-6 months, forms medium-sized crystals, the smell and taste are of medium to strong intensity, fresh, characterized by a light menthol, lemon, vanilla aroma, the taste feels cool, slightly astringent with a slightly bitter aftertaste.
