Nz5, Tawari (Ixerbia Brexiodes) Honey
The honey
Tāwari honey is a unique and exquisite honey found only in New Zealand.
It is the only species within its genus; and only found in a few parts of the North Island. This rare honey is sourced from the Tāwari tree and is a local specialty of the Kaimai Ranges (Bay of Plenty) flowering during early summer, with abundant nectar. The tree's structured flower is laid out in fives; 5 petals, 5 anthers, 5 nectaries and even the pollen has a 5-sided shape. The honey has a very low pollen count, as it has large flowers which evolved with predominantly bird pollination, not bees. It is light cream in color, with a delicious butterscotch & white chocolate flavour with a delicate almond aftertaste. This buttery sweetness, with floral notes, make it a versatile honey for a variety of culinary applications, especially combined with cheese and desserts.
