Nz6, Thyme Honey
The honey
This honey was harvested in December 2024 and has a very strong thyme flavour as there is very limited nectar producing flowers for the honeybees at this early stage of the honey season. The moisture content is 18%. Most New Zealand thyme honey is exported, with less than 10 tonnes of thyme honey consumed by New Zealander each year. People like to use thyme honey as a health remedy in hot drinks during winter.
The beekeeping
This honey is from the Central Otago Region of New Zealand's South Island. The region is semi-arid and less than 100 tonnes of thyme honey is produced in New Zealand each season. This honey comes from a small certified organic family business with 600 beehives that produces 10-15 tonnes of thyme honey each season. The Adamson family has been beekeeping in Central Otago since 1937.
