At the Royal Palace Park, an urban treasure flows from the 1100 park trees each August—honeydew honey! This honey stays liquid for years, dark as walnut to ebony, thick and rich, low on moisture. Its flavor is like condensed milk, stewed fruit, and warm wood, with a unique licorice twist in this year’s batch. A true city delicacy, complex and comforting—nature’s sweet surprise, brewed quietly in the treetops of the capital.
This honeydew honey pairs wonderfully with crunchy caramel and chocolate ice cream—especially the rich, dark varieties. It also shines with bold flavors like licorice, saffron, and caramel. This deep, luxurious honey adds a mellow sweetness to yogurt, perfect for breakfast or dessert. Or simply drizzle it over your morning porridge. The Beekeeping
ByBi is an urban beekeeping association based in Oslo, Norway. They tend to bees living in the Royal Palace Park, producing delicious honey in regal surroundings. Idil Akdos, the head of ByBi, leads the buzzing beekeeping team. The honey is made by bees living on a tiny island in the park called Dronningdammen (the Queens pond), established in 1860. The Royal Palace actively supports the project—its kitchen uses the honey, and beekeepers are sometimes honored guests at royal gala dinners.
