Sl5, Chestnut honey (Slovenian honey with PGI)
The honey
Chestnut honey comes from nectar and/or honeydew collected by bees from the sweet chestnut tree.
It can be dark brown or amber in color, with a reddish hue. This honey differs significantly from other types due to its bitter, astringent scent, its distinctly bitter taste, and its long-lasting, very pronounced sharp and astringent aroma of herbs and wormwood. Its electrical conductivity is very high, sometimes exceeding 2 mS/cm. Chestnut honey usually does not crystallize. The beekeeping
The richness and diversity of Slovenia's plant world are reflected in the scent, color, and aroma of Slovenski med z zaščiteno geografsko označbo (Slovenian honey with Protected Geographical Indication).
The combination of different climates and the geographical terrain create unique conditions for honey production, resulting in a wide variety of honey types found here. The honey is produced in accordance with strict rules of good beekeeping practice and under regular supervision by independent control organizations. Such honey meets higher quality standards than those prescribed by the EU Honey Directive, including a lower water content (less than 18,6%) and a lower level of HMF (less than 15 mg/kg) – a compound formed during heating that indicates whether the honey has been improperly heat-treated or stored for too long.A lower HMF level means higher honey quality. Slovenian honey with a Protected Geographical Indication can be recognized by the protective label featuring the blue and yellow EU quality sign (Protected Geographical Indication). |
