The honey
Fir honey is made by bees from honeydew collected on fir trees. It is very dark, gray-brown in color with a greenish sheen.

The combination of different climates and the geographical terrain create unique conditions for honey production, resulting in a wide variety of honey types found here. The honey is produced in accordance with strict rules of good beekeeping practice and under regular supervision by independent control organizations. Such honey meets higher quality standards than those prescribed by the EU Honey Directive, including a lower water content (less than 18,6%) and a lower level of HMF (less than 15 mg/kg) – a compound formed during heating that indicates whether the honey has been improperly heat-treated or stored for too long.A lower HMF level means higher honey quality. Slovenian honey with a Protected Geographical Indication can be recognized by the protective label featuring the blue and yellow EU quality sign (Protected Geographical Indication). |
