The honey
Flower honey can vary greatly in its sensory properties, as these depend on the types of flowers from which the bees collected nectar. It is typically fairly light in color and has a medium to strong, even very strong, sweetness, with a burning sweet aftertaste.
This type of honey must also contain an acidic note, which is expressed from weakly to moderately strong. The aroma is recognizable as that of blossoms, fresh fruit, compote, or cooked fruit. The combination of different climates and the geographical terrain create unique conditions for honey production, resulting in a wide variety of honey types found here. The honey is produced in accordance with strict rules of good beekeeping practice and under regular supervision by independent control organizations. Such honey meets higher quality standards than those prescribed by the EU Honey Directive, including a lower water content (less than 18,6%) and a lower level of HMF (less than 15 mg/kg) – a compound formed during heating that indicates whether the honey has been improperly heat-treated or stored for too long. A lower HMF level means higher honey quality.
