The honey
Linden honey can be produced from both nectar and honeydew, which is why it has the characteristics of both nectar and honeydew honeys. Its color ranges from light yellow to light amber, straw-like shades.
In taste, it is medium to strongly sweet, weakly to moderately acidic, and weakly to moderately bitter. The aroma of linden honey is fresh, reminiscent of menthol, fresh walnuts, herbs, and boiled linden blossoms. A subtle floral aroma can also be perceived. The combination of different climates and the geographical terrain create unique conditions for honey production, resulting in a wide variety of honey types found here. The honey is produced in accordance with strict rules of good beekeeping practice and under regular supervision by independent control organizations. Such honey meets higher quality standards than those prescribed by the EU Honey Directive, including a lower water content (less than 18,6%) and a lower level of HMF (less than 15 mg/kg) – a compound formed during heating that indicates whether the honey has been improperly heat-treated or stored for too long.A lower HMF level means higher honey quality.
