The honey
Cosmos 2025
Cosmos is a joyful honey variety with its egg-yolk yellow hue in liquid form. The distinctive tapestry of floral bouquet on the nose reveals notes of ylang-ylang, wild Yasmin and rose. It gently develops into layers of tropical fruit on the palate…papaya, pineapple, and hints of kiwi. The above average acidity elevates the complexity of this outstanding speciality honey. Subtle hints of bees wax and fermented pollen is fleeting but indeed detectable on a fairly short finish. Cosmos honey variety usually granulates rapidly due to the higher-than-average glucose content, and often sets in a firm consistency with very tiny homogenous crystals. Cosmos (mainly bipinnatus and sulphureus) are common in the Highveld of South Africa, and typically flower from late February to April, peaking in March after the summer rains.
