Sw9, Forest Berry Honey
The honeyThis honey carries the flavors of the northern Swedish forests. BEEhappy’s European dark bees have gathered nectar from lingonberry, blueberry, and wild raspberry. Extraction on the 9th of July.
Aroma: Pleasant, medium, not overpowering Color: Amber Taste: Warm and aromatic. The honey has a soft, berry-like flavor with hints of the freshness of dew-drenched woodlands. Nectar from lingonberry and blueberry blossoms makes up about 45 percent, reflected in a fine balance between berry sweetness and fresh acidity. The aftertaste is medium in length, offering a hint of saltiness. About 40 percent of the honey comes from wild raspberry nectar. It truly enhances the nectar from lingon- and blueberry without overpowering them, a harmonious base where other blossoms can truly shine. Nectar sources: Lingonberry (Vaccinium vitis-idaea), blueberry (Vaccinium myrtillus), wild raspberry (Rubus idaeus), and goat willow (Salix caprea). BEEhappy operates in the southern part of Norrland, in northern Sweden and currently manages 34 colonies. The season at this latitude is short yet vibrant. Blooming comes quickly after spring, and everything feels more concentrated and intense. Daylight lasts long, and it often feels as if the day never truly ends. Based near the coast, the climate here is more even than further inland, especially in the transition from summer to autumn. The sea acts as a warming element.
BEEhappy is a one-woman-company since May 2019. One of the two large apiaries is located in Galtström Bruk (latitude 62.16) – a coastal area surrounded by pine and spruce forests. Here I keep my European dark bees and this is the location of the forest berry honey. The second large apiary, with buckfast bees, is on island Alnö (latitude 62.43). Above these two apiaries BEEhappy manages hives that various companies subscribe to as part of their environmental and sustainability work. These hives are placed on rooftops, courtyards, cemeteries, etc. Each harvest from these colonies is handled separately and the customer receives their own unique profile product. They all promoting the city to flourish – quite literally. Pollination is of great importance, as is the closeness between producer and consumer. In this way, we contribute together to three of the UN’s Global Goals. |
