The honey
Lime Honey is the quintessential taste of Edinburgh summer.
Positioned on the east coast of Scotland and on the Firth of Forth inlet of the North Sea. Edinburgh is significantly dryer compared to the Highlands and Atlantic west coast. Wet Junes followed by warm and humid July's offer favorable conditions for the secretion of lime nectar. The small-leaved lime (Tilia cordata), the large-leaved lime (Tilia platyphyllos), and the common lime (Tilia x europaea) are distributed throughout the city in fashionable avenues and city parks. The trees blossom in July, providing ample nectar for the cities bees. Edinburgh Lime blossom honey is characterised by its lemon yellow colour with glints of green.
