The honey
London was the first National Park City in the world - it is almost 50% green and blue – with thousands of parks, front gardens, allotments, street trees, green roofs, rivers, canals, and ponds.
London honey is rarely monofloral; instead, it's usually a diverse mixture of many nectar sources. This creates uniquely complex honeys, which vary dramatically from place to place and from month to month. This honey is from a rooftop apiary in Highgate, North London - a stone's throw from Hampstead Heath and surrounded by mature Lime, Sycamore, Oak, Chestnut, Willow, Tree of Heaven, fruit trees and established gardens. Highgate Honey is a small family business based in North London. They run 10 apiaries in various city locations with around 5 hives in each. Some of these are on roof tops, with the most spectacular views of the city. They are members of the Beefarmers Association.
Highgate Honey harvests the honey from their hives in small batches throughout the beekeeping season. Each batch is jarred separately to capture the colours, tastes and flavours of the different areas at different times of the year. Every jar of honey is labelled with the hive it has come from. Customers enjoy getting honey from their own part of the city and tasting the terroir of each location. |
