The honey
Scottish Ling Heather honey (Calluna Vulgaris) is a crop produced in August in the moorlands and hills of Scotland.
Ling Honey has unique features exhibiting a gel state rather than the normal liquid or solid state. Traditionally this has led to Ling Heather being sold and consumed as cut comb. Ling Heather is also thixotropic where the honey will temporally liquify when mechanically disturbed and then return to a firm gel state after a short time. A property that modern heather loosing technology exploits to allow for honey to be separated with a normal extractor. Ling Heather has a intense earthy malt vinegar like odour, an earthy caramel sweetness and a distinct bitterness on the finish. A persistent honey and one of the UK's most intense honeys. Due to the relatively high protein content (~3% compared with 0.1% for the average honey) and the colder conditions in which Ling flowers bees can struggle to dry the honey below 20% and so this honey can be legally sold with a water content up to 23% The beekeeping
