Welsh Spring Blossom Honey is a multifloral that truly expresses the lush green woods and hedgerows of the Welsh landscape.
Flowers such as bilberry, dandelion, blackthorn, sycamore, and hawthorn as well as many other wild flowers contributing to the ensemble of flavours. The Welsh spring Blossom honey is complex: the odour is reminiscent of dried flowers, with a hint of pungency, the aroma is dry floral, berry fruit, and a depth of sweetness and fine butteriness that grows and then slowly tails off. Wainwright’s Bee Farm is headquartered in Aberystwyth on beautiful Ceredigion Bay in Wales and tends to around 1800 bee colonies across both Wales and England producing a variety of single origin monofloral and multifloral honey varieties.
Starting in May they raise queens from their own selected breeder mothers and make 1000 nuclei colonies that will grow to become the honey producers during the season. The nectar flow can be intense over a few short months where a change in the weather can spell gloom or else joy. If the sun shines the bees prosper. Hopefully, by the end of September, they have a good crop of many different types of honey: Welsh spring blossom honey; Welsh summer blossom honey from blackberry and willowherb; Shropshire spring honey from rapeseed and field beans; lime honey from Wiltshire; summer wildflower honey from Salisbury Plain; borage honey from Essex; and the last crop, heather honey from the Welsh mountains.
