The honey
This honey was harvested on July 25, 2025, with a moisture content of 17.5%. Classified as white, it is produced from a diverse range of nectar sources in southeastern Wisconsin, including clover, native wildflowers, fruit tree blossoms, and forage from surrounding prairie and wetland ecosystems.
The honey has a light, clean taste with subtle notes of wildflower and vanilla, and a crisp, mildly fruity finish. Its clarity, gentle sweetness, and smooth texture make it ideal for tea, baking, breakfast spreads, dressings, and marinades. It also pairs beautifully with fresh cheeses and is well-suited for mead-making and traditional herbal preparations. The beekeeping
Jam Session Honey is a locally rooted beekeeping business based in Elkhorn, Wisconsin, USA, owned by Stephanie Slater. A beekeeper for 10 years, Stephanie has served on the boards of local, state, and national beekeeping organizations, contributing to the advancement of pollinator education and honey bee health.
Her apiary sits on a 30-acre property that is no longer farmed, but now planted with vegetable gardens and forage to support local wildlife. It is also surrounded by 80 acres of prairie and more than 500 acres of DNR-managed wetland, offering a rich and diverse habitat for healthy, productive colonies. Stephanie was named 2022 Wisconsin Beekeeper of the Year and is Wisconsin's first American Honey Show Training Council honey judge. Her honey has earned national and international recognition, including Best of Show at multiple state and national honey shows and the Best Tasting Honey in the United States from the 2021 Center for Honey Bee Research International Black Jar Contest.
